- 2 cups rice, uncooked, not instant variety
- 4 cups chicken stock
- 1 cup water
- 14 cup olive oil
- 2 carrots, chopped
- 1 green pepper, chopped
- 6 scallions, with green tops, chopped
- 3 tablespoons soy sauce
- 1 bunch fresh parsley, chopped, most stems removed
Directions

1Heat olive oil in large pot.

2Add rice and stir.

3Fry for 5-7 minutes.

4Add remaining ingredients, stir and heat to boil.

5Cover and keep on low heat for 1 hour, stirring once or twice.

6Serve and enjoy!
