Ingredients

  • 2 cups rice, uncooked, not instant variety
  • 4 cups chicken stock
  • 1 cup water
  • 14 cup olive oil
  • 2 carrots, chopped
  • 1 green pepper, chopped
  • 6 scallions, with green tops, chopped
  • 3 tablespoons soy sauce
  • 1 bunch fresh parsley, chopped, most stems removed

Directions

    Heat olive oil in large pot.

    Add rice and stir.

    Fry for 5-7 minutes.

    Add remaining ingredients, stir and heat to boil.

    Cover and keep on low heat for 1 hour, stirring once or twice.

    Serve and enjoy!
