- 3/4 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped fresh mushrooms (optional)
- 1 c. water
- 1/2 c. uncooked lentils
- 1/2 tsp. garlic powder
- 1 (16 oz.) can 1/3 less sodium chicken broth
- 2/3 c. uncooked rice (basmati)
Directions

1Coat a saucepan with vegetable cooking spray; place over medium heat until hot.

2Add onion and next 2 ingredients; saute 3 minutes until tender.

3Add water and next 3 ingredients.

4Bring to boil; cook 2 minutes.

5Cover and reduce heat; simmer 20 minutes. Add rice and simmer for 20 more minutes, or until rice is done and lentils are tender.

6Stir well.

7Serves 4.
