- 1 c. uncooked rice
- 1 3/4 c. chicken broth, boiling
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- salt and pepper to taste
- 1/4 c. butter
Directions

1In saucepan melt butter.

2Add green pepper and onion.

3Saute until onion is transparent.

4Add rice.

5Stir until rice is coated with butter.

6Add broth; bring mixture to a boil.

7Turn heat down; cover.

8Simmer for 1/2 hour, stirring after the first 15 minutes to distribute vegetables.
