- 1/3 c. uncooked brown rice
- 1 1/2 c. chicken broth
- 1/3 c. thin spaghetti, broken into 1/2-inch pieces
- 2 tsp. butter
- 2 Tbsp. chopped green pepper
- 2 Tbsp. sliced green onion
- 1 clove garlic, minced
- 1/2 tsp. dried thyme
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. chopped parsley
Directions

1Cook rice in 1 cup of the broth in covered saucepan until almost tender, about 30 minutes.

2Cook spaghetti in butter over low heat until golden brown, about 2 minutes.

3Stir frequently. Watch carefully.

4Add browned spaghetti, onions, green pepper, garlic, thyme, salt, pepper and remaining 1/2 cup broth to rice. Bring to boil; reduce heat and cover.

5Cook over medium heat until liquid is absorbed, about 10 minutes.

6Remove from heat; let stand 2 minutes.

7Garnish with parsley.
