- 1 Tbsp. butter
- 1 medium onion
- 1 c. long grain rice
- 2 c. chicken or beef stock
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Melt butter in heavy pan, one with tight fitting lid.

2Add onion and saute about 2 minutes until translucent, not brown.

3Add rice, stirring to coat grains with butter; cook until translucent. Pour in stock.

4Add salt and pepper, bring to boil over high heat and immediately cover with lid.

5Reduce heat and simmer 23 minutes. Remove lid and fluff.
