- 1 stick margarine
- 1 1/4 c. long grain rice
- 1/2 c. chopped onion
- 1/4 lb. sliced mushrooms
- 1 can Swanson's chicken broth
- 1/4 tsp. thyme
- 1 c. water
- salt and pepper to taste
- fresh parsley
Directions

1Melt margarine in large skillet; add rice and stir until coated.

2Add onion and mushrooms; cook 5 minutes.

3Add chicken broth, water, thyme, salt and pepper; stir.

4Cover and simmer 25 to 30 minutes until rice is tender.

5Snip parsley and sprinkle over top.
