- 1 c. sliced mushrooms
- 1/2 c. sliced green onions
- 1/2 c. celery
- 3 Tbsp. margarine
- 3 c. water
- 1 1/2 c. uncooked long grain rice
- 5 tsp. chicken bouillon
- 1 1/2 tsp. Italian seasoning
- 1/2 c. Parmesan cheese
- 1/2 c. chopped red pepper
- 1/2 c. fresh green peas
- 1/2 c. shredded carrots
Directions

1In large saucepan, cook mushrooms, onions and celery in margarine.

2Add water, rice, bouillon and Italian seasoning. Bring to a boil.

3Reduce heat; cover and simmer 25 minutes.

4Add cheese, pepper, peas and carrots.

5Cook 5 minutes or until rice is tender and liquid is absorbed.
