- 1 c. raw rice
- 1 1/2 c. water
- 7 c. milk
- 4 egg yolks
- 1 c. sugar
- 1 c. milk
- 1 tsp. vanilla extract
- dash of salt
Directions

1Place rice and water in a Dutch oven. Cook until all water is absorbed.

2Add 7 cups milk. Cook this until rice is soft, about 1 hour.

3After rice is soft, in a separate pot, bring egg yolks, sugar, 1 cup milk, vanilla and salt to a boil.

4Add yolk mixture to rice and stir until mixed.

5Pour into a glass Pyrex dish. Beat the egg whites until frothy and put on top of pudding.

6Brown in oven about 15 minutes at 350°.
