- 4 c. milk
- 1 tsp. vanilla
- 1/2 c. regular white rice
- 1/2 tsp. salt
- 1/4 c. margarine
- 3 beaten eggs
- 1/3 c. sugar
Directions

1Bring 2 cups milk and rice to boil.

2Reduce heat; cover and simmer over low heat until rice is tender, about 15 minutes. Remove from heat; stir in margarine.

3In a bowl, combine remaining 2 cups milk, beaten eggs, sugar, vanilla and salt.

4Gradually stir rice mixture into egg mixture.

5Pour into 10 x 6 x 2-inch baking dish.

6Bake uncovered 30 minutes in preheated 325° oven.

7Remove from oven and stir.

8Sprinkle top with cinnamon.

9Return to oven; bake 30 to 40 minutes.

10Use the knife test to check for doneness.
