- 2 qt. milk
- 1/2 c. rice
- 1/2 c. sugar
- lemon rind
- pinch of salt
- 2 eggs
- 1/2 c. sugar
- 1 tsp. vanilla
Directions

1Put milk, rice, sugar, lemon rind and salt in pot and simmer approximately 1 hour.

2When rice is cooked, remove from stove and add the eggs, sugar and vanilla which have been mixed together. Stir constantly for 2 minutes.

3Pour into serving dish and cool. When cool, refrigerate.
