Rice Pudding

  • 1 cup rice
  • 1 quart water
  • 1/2 cup raisins
  • 4 eggs
  • 1/2 cup sugar
  • 1/2 pint milk
  • pinch salt
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg

Directions

    Boil rice without stirring until tender.

    Raisins boiled with the rice is an improvement in which case add little more water. Beat eggs, sugar, milk, salt, butter, nutmeg and vanilla.

    Add this mixture to rice.

    Place in moderate oven.

    Bake slowly for 1 1/2 to 2 hours.

    Open oven door every half hour and with spoon break the crust and stir up the rice.

    Be sure to bake very slowly.

    It will dry.
