- 2 c. rice
- 1/2 tsp. salt
- 1 bar butter
- 6 egg yolks
- 1/2 gal. milk
- 1 1/2 c. sugar
- 1 lemon, grated peel
Directions

1Place rice in water with 1/2 teaspoon of salt, butter and grated lemon peel.

2Stir well on low heat for about 1 minute. Cover and simmer for about 20 minutes.

3When it's dry, add 1/2 gallon of milk and stir constantly.

4When it begins to bubble, add egg yolks with sugar that have been beaten together separately. Pour into 1 large or several small dishes and sprinkle with cinnamon.
