- 1 c. rice, cooked
- 2 c. milk
- 1 c. cream or half and half
- 1/3 c. sugar
- pinch of salt
- 3 eggs
- 2 Tbsp. cornstarch
- 1 tsp. vanilla
Directions

1Cook rice and rinse.

2Heat milk and cream.

3Mix sugar, salt and 3 egg yolks.

4Let milk come to a boil.

5Add cornstarch, dissolved in a little milk. Add sugar mixture, which a little of the milk mixture has been added.

6When thickened, add cooked rice and vanilla.

7Beat egg whites stiff. Add 6 tablespoons sugar and a little lemon juice.

8Put on top of rice pudding and bake until brown.
