Rice Pudding

Ingredients

  • 1 c. rice, cooked
  • 2 c. milk
  • 1 c. cream or half and half
  • 1/3 c. sugar
  • pinch of salt
  • 3 eggs
  • 2 Tbsp. cornstarch
  • 1 tsp. vanilla

    Cook rice and rinse.

    Heat milk and cream.

    Mix sugar, salt and 3 egg yolks.

    Let milk come to a boil.

    Add cornstarch, dissolved in a little milk. Add sugar mixture, which a little of the milk mixture has been added.

    When thickened, add cooked rice and vanilla.

    Beat egg whites stiff. Add 6 tablespoons sugar and a little lemon juice.

    Put on top of rice pudding and bake until brown.
