- 1 c. rice
- 2/3 c. sugar
- 1 tsp. salt
- 4 eggs
- 3/4 c. raisins
- 1 tsp. vanilla
- 1 1/2 qt. milk
Directions

1Combine 1/4 cup sugar, 1 teaspoon salt, 1 quart milk, 1 cup rice and raisins in double boiler.

2Steep until rice is done. Bring to boil 1/2 quart milk.

3Beat eggs gently and add remaining sugar.

4Pour hot milk into beaten egg mixture and add vanilla. Combine and fold gently egg mixture into rice mixture.

5Pour into 3-quart casserole.

6Dot with butter and sprinkle with cinnamon. Place casserole in shallow pan of water.

7Bake 1 hour until custard is set at 350°, until knife inserted comes out clean.
