  • 1 cup Instant Rice
  • 2-1/2 cups Milk, Divided
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Cinnamon
  • 1/8 teaspoons Nutmeg
  • 1/2 cups Sugar
  • 1/4 cups Raisins
  • 2 whole Eggs, Slightly Beaten
  • 1/2 teaspoons Vanilla

Directions

    Combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar, & raisins. Bring to a gentle boil, stirring constantly.

    Reduce heat; boil slowly for 10 minutes, stirring occasionally.

    Mix eggs with remaining milk. Slowly add to hot mixture, stirring constantly.

    Cook over medium heat until thickened. Add vanilla. Let cool 10 minutes before serving.
