- 6 slices bacon
- 10 eggs
- 1/2 c. shredded Cheddar cheese
- 2 Tbsp. chopped green chiles
- 1 diced potato (medium)
- 1 doz. flour tortillas
- 1 tsp. minced garlic
- salt and pepper to taste
Directions

1Fry bacon until crisp.

2Drain on paper towel.

3Fry potatoes in 2 tablespoons bacon drippings until done.

4Beat eggs with minced garlic, salt and pepper.

5Pour into skillet with potatoes, cheese and green chiles; cook until firm, stirring constantly.

6Heat tortillas, one at a time, on burner until soft, about 1 second on each side.

7Stack on paper towel.

8Roll 2 tablespoons egg mixture in each tortilla.

9May serve with salsa.
