  • 1 bag JELL-O Vanilla Instant Pudding
  • 3-1/2 qt. milk
  • 8 each eggs
  • 1-1/4 qt. cooked long-grain white rice
  • 2 cups brown sugar, firmly packed
  • 1-1/3 cups sliced almonds

Directions

    Beat dry pudding mix, milk and eggs in large bowl with whisk until well blended.

    Stir in rice.

    Pour into greased full hotel pan (or greased one-third hotel pan for trial recipe); cover.

    Bake at 300F for 1-1/2 hours, stirring every 15 min.

    Refrigerate several hours or until chilled.

    Sprinkle with sugar and almonds.

    Broil 1 to 2 min.

    or until sugar is caramelized.

    Refrigerate at least 1 hour before serving.
