Rice Pudding With Strawberry Jam

Ingredients

  • 2 1/8 cups water
  • 1 1/3 cups sweet rice
  • 7 tablespoons butter
  • 2 lemon peels
  • 1 cinnamon stick
  • star anise
  • 6 1/3 cups milk
  • 1 1/2 cups sugar
  • 5 egg yolks
  • 1 cup milk to mix with the egg yolks
  • 1 tablespoon flour custard
  • salt to taste
  • cinnamon to taste
  • strawberry jam to taste

Directions

    In a saucepan, bring to boil water seasoned with a little salt and rice. Lower heat, cover the saucepan, and cook until the water evaporates completely.

    Add the butter, lemon peel, cinnamon stick, star anise, and milk gradually. Stir well.

    Cook for about 30 minutes, stirring occasionally.

    After 30 minutes, add the sugar, and stir again.

    Mix the egg yolks with 1 cup milk and custard flour, stirring constantly, and pour into the pan of rice. Turn off the heat when the mixture starts to boil.

    Pour into bowls, or trays, and refrigerate.

    When cold, sprinkle with cinnamon.
