Ingredients

  • 3 c. cooked rice
  • 4 hard-boiled eggs
  • 2 oz. jar pimiento, chopped
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. mayonnaise, mixed with 1 tsp. horseradish or mustard

Directions

    When rice and eggs are cold, chop the eggs and add to the rice.

    Add all ingredients and mix well. Better if made the day before serving.
