- 1 (9 oz.) can crushed pineapple in heavy syrup
- 2/3 c. Minute rice
- 2/3 c. water
- 1/2 tsp. salt
- 1 1/2 c. tiny marshmallows
- 1 ripe banana, diced
- 2 tsp. lemon juice
- 1 c. Cool Whip
- 1/2 c. nuts (optional)
Directions

1Drain pineapple, saving syrup.

2In saucepan, combine rice, water, syrup and salt.

3Mix to moisten.

4Bring quickly to a boil. Cover and simmer for 5 minutes.

5Remove from heat; let stand 5 minutes.

6Add remaining ingredients; let cool.

7Fold in whipped cream.

8Chill.
