Rice Salad

Ingredients

  • 2 c. cooked rice
  • 1/2 c. raisins
  • 1/2 green pepper
  • 1 stalk celery
  • 1/2 onion
  • 1/2 c. mushrooms
  • 1 carrot
  • 1/2 c. frozen peas
  • 1/2 c. mayonnaise
  • salt/pepper

Directions

    Cook the peas in water with a little salt and sugar.

    Drain. Chop the celery, onion and green pepper very fine and grate the carrot.

    Slice mushrooms, if they're small, or chop them if they're larger.
  4. 4
    Combine all the ingredients and season well with salt and pepper.
  5. 5
    Serve with cold meat.
