Ingredients
- 1 c. rice (dry, not cooked)
- 4 eggs
- 1 medium zucchini, chopped
- 1/4 to 1/2 onion, chopped
- 1/3 c. fresh parsley, chopped
- 2/3 c. butter
- 1/4 to 1/3 c. half and half
- 1 c. Parmesan cheese
- salt and pepper to taste
Directions

1Cook rice as directed on package.

2Saute onion, zucchini and parsley in butter.

3Mix all ingredients together.

4Oil a 9 x 13-inch pan with olive oil.

5Pour rice mixture in pan.

6Bake at 350° for 1/2 hour or until top is golden brown.

7Cool.

8Cut into squares.

9(Will firm up as it cools.)

10Serve as appetizers or side dish.
