Rice With Pine Nuts

- 2 Tbsp. olive oil
- 1 c. long grain rice
- 2 c. water
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. pine nuts
Directions

1Heat the olive oil in a medium saucepan.

2Add the rice and saute gently for 5 minutes, stirring constantly.

3Be sure not to brown the rice.

4Add the water, salt and pepper; bring to a rapid boil.

5Cook for about 7 minutes on medium-high heat until the water gets below the surface of the rice.

6Reduce the heat to the lowest point, cover the saucepan tightly and cook for 25 minutes, until all the water is absorbed into the rice.

7Fluff the rice with a fork, sprinkle all the pine nuts on top and serve.
