- 4 c. cooked rice, divided
- 2 Tbsp. butter or margarine
- 1 onion, chopped
- 8 oz. fresh mushrooms
- 1 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 1/2 tsp. white pepper
- 1/8 tsp. ground nutmeg
- 1 c. sour cream
- 1 c. finely chopped spinach
- 1 c. grated Swiss cheese
- paprika
Directions

1Spoon half of the rice in a buttered, shallow 2-quart baking dish.

2Melt the butter in a large skillet with onion, mushrooms, lemon juice and seasonings.

3Cook over medium heat until onion is soft.

4Remove from heat; stir in sour cream.

5Spread mixture over rice.

6Cover with spinach.

7Top with remaining rice.

8Sprinkle with cheese.

9Dust with paprika.

10Bake at 350° for 30 to 35 minutes or until heated.
