- 1 yellow cake mix
- 2 lb. Ricotta
- 4 eggs
- 1/2 c. sugar
- grated rind of lemon
- 1 1/2 tsp. vanilla
- 1/4 c. sugar
- 1/2 tsp. cinnamon
Directions

1Grease and flour a 9 x 13-inch oblong pan.

2Set oven at 350°. Mix yellow cake mix as directed on package.

3Mix together the Ricotta, eggs, sugar, lemon rind and vanilla.

4Pour this mixture on top of cake batter.

5Sprinkle the mixed sugar and cinnamon on top.

6Bake 50 to 60 minutes.
