  • 1 (18 1/4 oz.) yellow cake mix (the kind with pudding in it)
  • 2 lb. Ricotta cheese
  • 2 Tbsp. vanilla
  • 1 1/2 c. sugar
  • 6 eggs
  • 12 oz. container Cool Whip
  • 2 tsp. almond extract

Directions

    Prepare cake mix according to package directions.

    Pour into a greased and floured 13 x 9-inch pan.

    In another bowl beat together until smooth the Ricotta cheese, vanilla, sugar and eggs. Pour over the cake.

    Place in a 350° oven and bake for 1 hour and 15 minutes.

    Remove from oven and cool.

    Combine Cool Whip and almond extract; blend.

    Spread over cooled cake.
