  • 1 (3 1/2 ounce) package lemon pudding mix
  • 4 large eggs
  • 1 cup water
  • 34 cup oil
  • 24 ounces ricotta cheese
  • 5 eggs
  • 12 cup sugar
  • 1 teaspoon vanilla

    Preheat oven to 350.

    Mix first five ingredients and pour into 13 x 9 cake pan sprayed with PAM.

    Mix cheese with eggs, sugar and vanilla and pour into center of cake batter.

    Bake for 1 hour.
