- 6 eggs
- salt
- white pepper
- 1 cup ricotta cheese
- 1/4 cup freshly grated parmesan cheese
- 1 1/2 tablespoons chopped marjoram
- 1 clove garlic, crushed
- 1 tablespoon olive oil, mixed with
- 1 teaspoon melted butter
Directions

1Preheat broiler Beat eggs with 3/4 teaspoon salt and white pepper to taste.

2Stir in cheeses, marjoram and garlic.

3Heat oil and butter in 8- or 10-inch skillet.

4Add egg mixture and lower heat.

5Cook until set, about 12 minutes, then brown under broiler.

6When done, slide frittata onto plate.

7Serves 6.
