  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large egg yoke
  • 2 tbsp sugar
  • 2 tbsp lemon zest (or to taste)
  • 1/2 cup ricotta cheese
  • 2 large egg whites

Directions

    Mix dry ingredients together, set aside

    Mix wet ingredients, add to dry ingredients, mix well

    Beat egg whites until they form soft peaks, then fold in to mixture

    Heat pan use 1/4 cup of batter, cook until golden brown flip
