- 1 c. ricotta cheese
- 1 egg
- 1/2 tsp. grated onion
- 1/8 tsp. salt
- 1/4 tsp. paprika
- Bread rounds
Directions

1Beat cheese with egg until thoroughly blended. Add onion and salt.

2Mix well.

3Toast 20 to 24, 1 3/4 inch rounds of whole-grain bread on one side. Heap cheese mixture on the untoasted side of the bread. Broil for about one minute or until brown and puffy. Sprinkle with paprika.

4Serve hot. Yield: at least 20.
