  • 1 c. ricotta cheese
  • 1 egg
  • 1/2 tsp. grated onion
  • 1/8 tsp. salt
  • 1/4 tsp. paprika
  • Bread rounds

    Beat cheese with egg until thoroughly blended. Add onion and salt.

    Mix well.

    Toast 20 to 24, 1 3/4 inch rounds of whole-grain bread on one side. Heap cheese mixture on the untoasted side of the bread. Broil for about one minute or until brown and puffy. Sprinkle with paprika.

    Serve hot. Yield: at least 20.
