  • 1 1/2 c. sugar
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 1/2 lb. Ricotta
  • 1 c. cooked rice
  • 2 tsp. vanilla

    Beat eggs well.

    Add rice.

    Mix Ricotta, sugar, salt, vanilla and cinnamon.

    Add to eggs and rice.

    Blend all together.

    Pour into greased 10-inch pan.

    Bake at 350° for 1 hour.
