  • 1lbs. 2oz. dried pasta
  • S&P
  • knob of butter
  • small bunch of fresh oregano or marjoram
  • 31/2oz. Parmesan cheese
  • 31/2oz. Fontina cheese
  • 3/12oz. mascarpone cheese
  • 1/4 Nutmeg
  • A small ball of mozzarella

Directions

    Cook pasta 2 min less, than expected.

    Froth butter, and add the herbs.
  3. 3
    Add pasta and reserve cooking water.
  4. 4
    Add Parmasean, fontina and mascarpone.
  5. 5
    Return to medium heat and melt cheese.

    Season and place in baking dish.

    Grate nutmeg, parmasean and mozzarella atop.
  8. 8
    Bake for 10 min and finish in broiler.
