  • 1 c. uncooked rice
  • 1/4 c. oil, divided
  • 1 medium tomato, peeled and cut up small
  • 1 clove garlic, minced
  • 1/4 c. chopped onion
  • 1 chicken, cut in serving pieces
  • 2 c. chicken bouillon
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. chili powder

Directions

    Brown the rice in 2 tablespoons oil over moderate heat, stirring frequently.

    Add tomato pieces, onion and garlic to rice. Cook 5 minutes longer, stirring constantly.

    Brown chicken in remaining oil in large pot.

    Add rice mixture, bouillon and seasonings.

    Bring to boil.

    Lower heat, cover and simmer 40 minutes or until rice and chicken is tender.
