- 1 c. uncooked rice
- 1/4 c. oil, divided
- 1 medium tomato, peeled and cut up small
- 1 clove garlic, minced
- 1/4 c. chopped onion
- 1 chicken, cut in serving pieces
- 2 c. chicken bouillon
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. chili powder
Directions

1Brown the rice in 2 tablespoons oil over moderate heat, stirring frequently.

2Add tomato pieces, onion and garlic to rice. Cook 5 minutes longer, stirring constantly.

3Brown chicken in remaining oil in large pot.

4Add rice mixture, bouillon and seasonings.

5Bring to boil.

6Lower heat, cover and simmer 40 minutes or until rice and chicken is tender.

7Serves 4.
