- 2 Tbsp. olive oil
- 4 Tbsp. butter
- 1/2 c. chopped onion
- 1 c. uncooked rice
- 2 Tbsp. dry sherry
- 2 c. frozen peas
- 1 (15 1/2 oz.) can chicken broth
- 1 1/4 tsp. salt (optional)
- 1/4 tsp. white pepper
- 1/4 c. grated Parmesan cheese
Directions

1Heat oil and 2 tablespoons butter in large saucepan; saute onion for 5 minutes. Mix in rice and saute until clear. Add sherry and cook over low heat for 1 minute. Add broth, peas, salt and pepper. Cover and cook 15 minutes or until rice is tender. Remove from heat. Add cheese and remaining butter.
