Ingredients

  • 1/2 c. butter
  • 4 medium carrots, cut in 1-inch strips
  • 1 medium onion, thinly sliced
  • 2 Tbsp. grated orange rind
  • 4 oz. canned green beans, drained
  • 3/4 c. slivered almonds
  • 1/3 c. chopped pistachio nuts
  • 1 c. honey
  • 1 tsp. turmeric
  • 1 1/2 tsp. salt
  • 2 c. long grain brown rice, washed, soaked in cold water for 30 minutes and drained

    In a medium saucepan, melt butter over moderate heat.

    Add carrots and onions.

    Cook, stirring occasionally, for 5 to 7 minutes or until onion is soft, but not browned.

    Stir in orange rind, green beans, almonds, pistachios, honey, turmeric and 1/2 teaspoon salt.

    Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
