  • 12 pieces boneless chicken breasts
  • 2 (8 oz.) bottles Russian dressing
  • 2 (12 oz.) jars apricot preserves
  • 1 pkg. dry onion soup mix

Directions

    Batter the chicken in a mixture of Bisquick mix and yellow corn meal and brown quickly in some vegetable oil.

    Remove chicken and place in a Pyrex baking dish.

    Mix in a mixing bowl the Russian dressing, apricot preserves and dry onion soup mix.

    Pour over the chicken and bake for 45 minutes at 350°.

    Serve over rice.
