  • 21 Ritz crackers
  • 3 egg whites
  • 1 c. sugar
  • 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • whipping cream

Directions

    Mix baking powder and egg whites and beat until stiff.

    Add sugar and mix well.

    Stir in by hand vanilla, pecans and cracker crumbs.

    Pour into a well-greased pie pan and bake at 350° for 25 minutes.

    Cool, and then top with whipping cream.
