Ingredients

  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 2 Tbsp. butter or margarine
  • 2 (16 oz.) cans tomatoes, drained
  • 1/2 to 1 tsp. oregano
  • 1/4 tsp. rosemary (optional)
  • 1/2 to 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 to 1/2 tsp. Tabasco
  • 2 1/2 to 3 lb. uncooked shrimp, peeled and cleaned
  • 6 oz. tomato paste
  • 3 to 3 1/2 c. cooked rice
  • 1 c. frozen peas, cooked until barely tender

Directions

    Saute green pepper and onion in butter or margarine until soft.

    Add drained tomatoes and seasoning.

    Cover and simmer for 30 minutes.

    Add uncooked shrimp.

    Cover and cook on low for 3 to 5 minutes.

    Add tomato paste and cook an additional 5 to 10 minutes.

    Gently stir in rice and well drained peas.

    Cover and immediately serve.

    Makes enough for 6 to 8 people.
