- 5 lb. eye of round
- 3 Tbsp. vinegar
- paprika
- 1 onion, sliced
- salt & pepper
- garlic salt
- 2 c. boiling water (or 3 c. for extra au jus)
Directions

1Rub beef with vinegar.

2Sprinkle with salt, pepper, garlic salt and paprika.

3Brown in roaster (uncovered) at 350 degrees for 1 hour.

4Add water and cover meat with onion.

5Lower oven to 300 degrees, cover and bake another 4-5 hours.

6For a smaller roast, cook about 2 1/2 hours to 3 hours (approximately 1 hour per pound).

7Cool and thinly slice, then reheat in juice.
