  • 1 medium, whole chicken
  • 1 Tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. oregano
  • fresh ground pepper
  • dash of salt
  • 1/2 medium onion
  • 1 sprig fresh sage or sprinkle 1 tsp. dry sage over onion

Directions

    Preheat oven to 375°.

    Rinse chicken off, including inside of cavity.

    Brush olive oil all over bird, then sprinkle over the seasonings, saving paprika for last.

    Insert onion and sage into cavity, then bake on a rack with a drip pan underneath for 25 to 30 minutes, back side down.

    Turn over and cook 5 to 10 minutes. Serve with fresh vegetables and new potatoes.
