Ingredients
- 1 dressed young coon
- 2 stalks celery
- 2 Tbsp. salt
- 1/4 tsp. red pepper
- 2 medium onions
- 1 carrot
- 1 tsp. black pepper
- 1 c. water
- 1 Tbsp. baking soda
Directions

1Chill coon thoroughly.

2Remove all fat and scent glands.

3Rub soda well into skin.

4Rinse thoroughly inside and out.

5Place in deep roasting pan and barely cover with warm water.

6Add onions, celery and carrot.

7Cover and simmer gently 1/2 hour.

8Remove coon.
-
9Place coon on back in a roasting pan with tight lid.

10Add the water and roast at 350° until tender (about 2 hours).

11Remove cover; add more water if needed and roast, uncovered, to a rich brown.

12Serve with dressing and gravy.
