Roast 'Coon

  • 1 dressed young coon
  • 2 stalks celery
  • 2 Tbsp. salt
  • 1/4 tsp. red pepper
  • 2 medium onions
  • 1 carrot
  • 1 tsp. black pepper
  • 1 c. water
  • 1 Tbsp. baking soda

Directions

    Chill coon thoroughly.

    Remove all fat and scent glands.

    Rub soda well into skin.
  4. 4
    Rinse thoroughly inside and out.

    Place in deep roasting pan and barely cover with warm water.

    Add onions, celery and carrot.

    Cover and simmer gently 1/2 hour.

    Remove coon.

    Place coon on back in a roasting pan with tight lid.

    Add the water and roast at 350° until tender (about 2 hours).

    Remove cover; add more water if needed and roast, uncovered, to a rich brown.

    Serve with dressing and gravy.
