Roast Potatoes

  • 1/3 cup extra virgin olive oil
  • 4 pounds potatoes (sweet all purpose or combination) pared cut into 2 to 3 inch chucks
  • grated zest of 1 orange
  • 1 tablespoon chopped fresh roasemary
  • 1 clove garlic minced
  • 1/2 teaspoon each salt and freshly ground pepper

    Preheat oven to 450 degrees

    Pour oil innto large roasting pan and heat in oven for 5 minutes. Add potatoes and stir to coat with hot oil.

    Bake shaking pan to turn pootatoes every 10 minutes until browned and crisp 50 to 60 minutes.

    Meanwhile combine orange zest, rosemary, and garlic in a small bowl.

    Drain potatoes on paper towels and transfer to serving bowl. Sprinkle with orange zest mixture salt and pepper.

    Serve hot.
