- 4 potatoes
- 3 -5 sprigs fresh coriander leaves
- salt
- 1 teaspoon black peppercorns, crushed
- 1 tablespoon lemon juice
Directions

1Scrub and wash potatoes.

2Cut into quarters without peeling them.

3Clean, wash and chop corriander leaves.

4Now, neatly place the potato quarters on a 12 inch square piece aluminium foil.

5Sprinkle salt, crushed peppercorns, corriander leaves and lemon juice.

6Wrap the foil properly around the potatoes.

7Double wrap, if necessary.

8Put it on live charcoals in a barbecue.

9Also put some live charcoals on top of the packet.

10Cook for 15 minutes.

11Serve hot with roasted corn.
