- 1 (3-rib) roast of beef
- flour
- salt
- coarsely cracked black pepper
Directions

1Preheat oven to 500°.

2Place meat in shallow open roasting pan.

3Sprinkle with flour; rub into meat.

4Season generously with salt and pepper.

5Place a tent of foil loosely over top of roast. Place in hot oven.

6Roast for 9 minutes (medium) per pound.

7When roasting time is up, turn off oven heat.

8Do not open oven door. Let roast remain in oven for at least 1 hour.
