  • 1 lb. asparagus, cut diagonally in 1 1/2 inch pieces
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 pkg. (5 oz. each) mixed baby salad
  • 1/3 c. bottled raspberry vinaigrette
  • 1 c. fresh raspberries

    Preheat oven to 425°.

    Toss asparagus with oil, salt and pepper.

    Spread on baking sheet, roast 8 - 10 minutes.

    Cool. Toss asparagus with baby salad, add vinaigrette - sprinkle with raspberries.
