Roasted Balsamic Vegetables....mmm!

Ingredients

  • 1 small onion
  • 3 carrots
  • 1 red pepper
  • 2 tablespoons olive oil
  • 18 tablespoon balsamic vinegar
  • 12 teaspoon seasoning salt
  • 14 teaspoon pepper
  • 12 teaspoon basil
  • 14 teaspoon rosemary

Directions

    Preheat oven to 350.

    Slice up carrots.
  3. 3
    Cut onion and red pepper into strips.
  4. 4
    Place in a casserole dish and toss with remaining ingredients.
  5. 5
    Bake in oven for approximately 50 minutes or until carrots are soft.

    Adjust your salt and pepper as required and serve.

    *I have also baked these on a baking pan.

    As well if I am in a hurry I have sauteed the mixture in a saute pan.You can also use other vegetables as desired.
