- 1 small onion
- 3 carrots
- 1 red pepper
- 2 tablespoons olive oil
- 18 tablespoon balsamic vinegar
- 12 teaspoon seasoning salt
- 14 teaspoon pepper
- 12 teaspoon basil
- 14 teaspoon rosemary
Directions

1Preheat oven to 350.

2Slice up carrots.

3Cut onion and red pepper into strips.

4Place in a casserole dish and toss with remaining ingredients.

5Bake in oven for approximately 50 minutes or until carrots are soft.

6Adjust your salt and pepper as required and serve.

7*I have also baked these on a baking pan.

8As well if I am in a hurry I have sauteed the mixture in a saute pan.You can also use other vegetables as desired.
