  • 6 beets peeled and quartered
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons virgin olive oil
  • sea salt
  • ground black pepper
  • 1 sprig fresh dill
  • 1 sprig fresh mint

Directions

    Preheat the oven to 200 degrees Celsius.

    Line a baking sheet with parchment paper.

    Put the beets on the baking sheet. Sprinkle with vinegar and oil and salt and pepper to taste.

    Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake another 20 minutes or until soft. If the liquid evaporated out, add a little more during baking.

    Serve with the herbs sprinkled on top.
