- 1 head cauliflower
- 2 red onions
- 1 Tbsp. chopped parsley
- 2 Tbsp. garlic olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. parmesan cheese
Directions

1Make cauliflower into 1-1/2 inch florets.

2Cut red onions into 8 wedges.

3Heat oven to 475°.

4In non-stick roasting pan, mix cauliflower, onions, oil, salt and 1/4 tsp. pepper.

5Roast 15 minutes. Toss and roast 5 to 10 minutes until lightly charcoal and tender. Transfer to platter, top with 1/4 tsp. pepper, parsley and cheese.
