  • 1 head cauliflower
  • 1 shallot, finely chopped
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper
  • Red wine vinegar

    Preheat oven to 350F.

    Spray a baking sheet with cooking spray.

    Cut cauliflower into bite-size florets.

    Put the cauliflower and shallot in a large bowl.

    Sprinkle with cumin.

    Add the olive oil and toss together.
