Ingredients
- 2 pkg. frozen corn, thawed and drained
- 4 scallions, sliced thin
- 1/2 c. chopped fresh cilantro
- 3 Tbsp. cider vinegar
- 1 Tbsp. olive oil
- 1/4 tsp. salt
- 1 red bell pepper, seeded and chopped
- 4 green onions, sliced (including tops)
- 1 Tbsp. honey
- 1 tsp. Dijon mustard
Directions

1Preheat oven to 425°.

2Spray baking pan with nonstick spray. Spread corn on pan.

3Roast for 20 minutes, stirring every 5 to 7 minutes.

4Cool completely.

5Combine bell pepper, scallions, green onions, cilantro, vinegar, honey, oil, mustard and salt.

6Stir in the corn.

7Cover and chill.
